Vegan Mediterranean Italian Pizza

This recipe for pizza is another one of my favorites. It combines the flavors of garlic, roasted red peppers, olive, mushrooms, onions, tomato and a hint of clams but not enough to distract from the other flavors. The flavors burst in your mouth and if you close your eyes, you'll think you're by the Mediterranean Sea in South Italy enjoying a meal baked by mama.

1 large pizza crust. (You could substitute the pizza crust with French bread)
2 - 3 Tbs. Roasted red pepper bruschetta
2 - 3 Tbs. Olive bruschetta
6.5 oz. can of wild caught clams (optional)
Jar of organic pizza sauce
Small can of organic mushrooms
1/2 diced sweet onion
1 large tomato sliced into thin slices
1 Tbs. Minced garlic
Black pepper


Mix the roasted red pepper bruschetta, olive bruschetta, and minced garlic into the pizza sauce. You could add a splash of white wine into the sauce to complement the flavor of garlic.

Drain the clams and mix them into the sauce. Omit this step if you don't want clams on your pizza.

Spread the sauce you've created above onto the pizza crust.

Spread the diced onion, mushrooms, and slices of tomato on top. You can add some fresh organic spinich if you're in the mood to add a little green to the reds.

Sprinkle some fresh ground black pepper on the top to taste.

In an oven preheated to 375 degrees, placed the pizza on an oven rack. Do not place it on a cookie sheet. Cook until the crust is nicely browned (approximately 12-15 minutes).
