A-gg Salad Sandwiches

I always loved egg salad sandwiches. This recipe satisfies the egg and mayo lover in me. It's quick (quicker than boiling eggs) and easy to prepare and tastes great.

1 container of x-tra firm tofu
1 cup of Vegenaise
1/4 cup chopped onions
1 Tbs. chopped dill pickles. You can use sweet pickle relish too.
1 Tbs. chopped celery (optional).
1/4 tsp. of French's Yellow Mustard.


Open, drain and press the tofu.

While it's draining, mix all of the other ingredients in a small or medium bowl and chill.

After the tofu is drained, cut it into 1/4" cubes.

Mix tofu into the Vegenaise mixture. Spread on fresh bread and serve.

NOTE: I was really skeptical that anyone could make a completely egg free mayonaise that tasted like mayonaise. Vegenaise somehow managed to do it.
